Mom’s Crock Pot Chili Beef Short Ribs

Crock Pot spicy chili beef short ribs. The perfect set it and forget it dish for a busy evening. Tender, fall off the bone perfection every time!

When we were kids we didn’t have a lot of money and never had a birthday party. Birthday’s consisted of my Grandma coming over and my mom making anything we wanted for dinner.

My oldest brother Scott always picked meatballs. John picked Tacos. Matt and I liked to mix it up, but more often than not, I picked chili beef.

As a kid I wasn’t really aware that chili beef isn’t a universal dish that every family ate. My mom, while great at many things, wasn’t much of a cook. To me, everything she made was delicious (except rutabga), but I think for her cooking was more of a chore and a necessity than something she enjoyed. She had something on the table every night.

Mission accomplished.

Crock Pot Chili Beef Short Ribs

I’m not exactly sure where this chili  beef recipe came from. I can’t even fathom my mom inventing a recipe on her own. I’m guessing she got it from a friend or clipped it from a magazine back in the day.

It’s super easy to make. That’s all that mattered to my mom back in the day. That, and the fact that her kids would eat it.

When I emailed her for the recipe, she said she never wrote it down but had it memorized. I told her that I might make a few tweaks.

I did.

Mom used boneless chuck roast and I used short ribs.

Mom used ketchup and I made my own tomato concoction.

Mom cooks hers in the oven and I made mine in the crock pot.

Mom serves hers with a can of corn and boiled red potatoes and I serve mine with cheesy polenta and roasted potatoes.

The flavors are nearly identical.

I’m pretty stoked to work this old time favorite into my regular rotation. Mom’s chili beef will live on for another generation in the Haley household!

Ingredients

  • 3.5 lbs beef short ribs
  • 1 15oz can tomato sauce
  • 3/4 cup white vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon worcestershire
  • 1/4 cup chili powder
  • 1 tablespoon chipotle chili powder
  • 1 medium onion thinly sliced
  • 1/2 cup beef broth

Instructions

  1. Add all ingredients to a crock pot. Cook on low for 8-10 hours. 

  2. Optional: serve with cheesy polenta and roasted potatoes.
