Grilled Shortcake Skewers

Is it summer yet? I’ve certainly been pretending it is, although I’ve only had a handful of official “bikini days” so far this year. Summer is totally my thing. There is something about it that makes me feel so carefree. I crave the long days, the warm nights, and the ocean breeze coming through the screen door……just imagining the smell of sunscreen makes me so happy! Moving to San Diego was exactly the right choice for me so I could enjoy “summer” more of the year. My soul requires it to remain peaceful.

Contrary to popular belief, its not always warm and sunny here. We too have “seasons”, they’re just subtle. I’ll get a taste of summer on vacation next week, and hopefully by the time I get back, it will be full on summer here in San Diego. We can usually swim in our pool by the end of April (its not heated) so fingers crossed that’s the case this year!  To supplement for the lack of summery, lay-out-poolside, heat lately, I’ve been summering it up by working on some new grill recipes.

 I think grilled fruit is a bit underrated. I am personally a huge fan, and this is one of those recipes that made me say “why haven’t I thought of this before?” I made these “shortcakes” even more summery by using a coconut pound cake. You can buy a pound cake at the store or make your own. I adapted THIS recipe for mine. The beauty of this is the endless possibilities. You can go classic with a plain pound cake and strawberries, or you can snazz it up by grilling peaches or apples, or by using a lemon pound cake. I’m pretty sure you can’t go wrong.

Grilled Shortcake Skewers



Coconut pound cake (store bought or homemade)

Whipped cream

Cut fruit and pound cake into similarly sized cubes. Thread onto BBQ skewers and grill over a medium high heat, turning occasionally until fruit is soft, and pound cake is toasted, about 6-8 minutes. Serve with whipped cream
