Is it summer yet? I’ve certainly been pretending it is, although I’ve only had a handful of official “bikini days” so far this year.
Summer is totally my thing.
There is something about it that makes me feel so carefree. I crave the long days, the warm nights, and the ocean breeze coming through the screen door……just imagining the smell of sunscreen makes me so happy!
Moving to San Diego was exactly the right choice for me so I could enjoy “summer” more of the year. My soul requires it to remain peaceful.
Contrary to popular belief, its not always warm and sunny here. We have “seasons”, they’re just a bit more subtle than you’d imagine.
I’ll get a taste of summer on vacation next week, and hopefully by the time I get back, it will be full on summer here in San Diego. We can usually swim in our pool by the end of April (its not heated) so fingers crossed that’s the case this year!
To supplement for the lack of summery, lay-out-poolside, heat lately, I’ve been summering it up by working on some new grill recipes
Grilled Shortcake Skewers
Grilled fruit kabobs are definitely underrated. As you’re loading up all your meats and veggies this summer, don’t forget about the fruit!
Nothing says summer time like fresh strawberries, but there are tons of other fruits that are great for grilling as well.
What fruits are good for grilling?
Some of my favorite grillable fruits are
- Strawberries
- Pineapple
- Stone fruits: peaches, plums, nectarines
- Rhubarb
- Pears
If you want to grill a smaller fruit like raspberries, wrap them up in a foil grill packet with a little bit of sugar. The possibilities are endless.
This is one of those recipes that made me say “why haven’t I thought of this before?” I made these “shortcakes” even more summery by using a coconut pound cake. You can buy a pound cake at the store or make your own.
I adapted THIS recipe for mine.
As an added bonus, I diced up 1/2 a cup of grilled strawberries and mixed it with a few tablespoons of sugar to create that syrup-y “sauce” that every great shortcake needs.
Encourage your family to make their own shortcake creations! Kids and adults alike can build their own skewers and assemble their own parfaits once the grilling is done.
This dessert is fun for the whole family and great for potlucks.

Ingredients
- Strawberries
- Pineapple
- Coconut pound cake store bought or homemade
- Whipped cream
Instructions

Cut fruit and pound cake into similarly sized cubes. Thread onto BBQ skewers and grill over a medium high heat, turning occasionally until fruit is soft, and pound cake is toasted, about 6-8 minutes. Serve with whipped cream
