I am beyond stoked to bring you this recipe for crispy AIR FRIED rolled potato tacos. What the heck is air frying? Lets just say it’s a miracle of modern science, and my new best friend.
Despite my love for fried foods, I have long had an aversion to frying due to the extreme mess it causes, and the gross lingering smell it leaves behind. No donut or fried chicken is worth stinking up my house for a week or more. Recently my friends at the Idaho Potato Commission asked me if I would be interested in creating a potato recipe using an air fryer.
Huh? A what?
Never one to back down from a challenge, I accepted, and although I was hopeful this would be the miracle I always dreamed of, I had my doubts.
When the Gourmia Air Fryer arrived I quickly changed my tune. This thing is AMAZING. You can honestly fry nearly anything you can imagine to a perfect crisp without using any oil at all. ZERO OIL! No mess. No smell. Super easy clean up.
I’m in love.
Since leaving San Diego on January 29th, I have yet to eat a taco. That’s three whole taco-free months. I’m not sure if it’s the fear that no NorCal taco will ever live up to the authentic Mexican ones I would get from my local taco shop in San Diego, or if I’m afraid it will make me terribly homesick, but I have found myself longing for my beloved crispy rolled potato tacos that have cured me of many a hangover.
Seeing as it’s the day after Cinco de Mayo, and I can only assume that several of you readers might be nursing a hangover yourselves, I think it’s finally time to end my taco strike.
All you need is some leftover mashed potatoes, corn tortillas, cheese and a Gourmia Air Fryer. NO OIL!!! Crispy and delicious in under 20 minutes. Plus, you can totally get stuff done (like playing with your dogs) while they crisp up in the fryer. You don’t have to stand a vigilant watch over a giant vat of oil in order to avoid starting a kitchen fire like you would have to with regular frying.
Air Fried Rolled Potato Tacos
Zero oil needed to make these crispy fried potato tacos!
Ingredients
- 4 corn tortillas
- 1 cup leftover mashed potatoes
- 1/2 cup shredded cheddar cheese
- salsa guacamole, hot sauce, extra cheese for garnish.
Instructions

Heat tortillas in a hot skillet until warmed and pliable.

Spread each tortilla with 1/4 cup mashed potatoes

Sprinkle each tortilla with 2 tablespoons cheese and roll up.

Place rolled tacos seam side down in the basket of a Gourmia Air Fryer

Set temperature to 390 degrees and cook for 18-20 minutes until crispy.

Top with desired garnish and enjoy.
If you run out of potatoes and you still have tortillas left, you can make some chips!
I’ve also tried and tested:
Buffalo wings. Hubs approved! (and he is super particular about his wings)
Fried mozzarella sticks
Churro bites (essentially donut holes)
Grilled cheese sandwich.
Onion rings.
All were perfectly crispy and super tasty, and helped score the Gourmia Air Fryer a permanent piece of real estate on my (super selective) countertop.
Apparently you can also cook steak and seafood in this thing, but I have yet to try that for myself. Coming soon!

My favorite fried food is definitely chicken. I hardly ever have it that way due to the high fat content. I’m also a fan of fried potatoes but have learned to enjoy them baked in the oven.

My mind is blown. I LOVE fried food and never let myself eat it because a)grease and b)FAT.
