Tuesday is farmers market day for me. Nearly every Tuesday Jen, Leila and I walk to our local farmer’s market. Some days we’re shopping for something in particular, some days we’re not. Some days we’re not shopping at all, only enjoying the walk and the atmosphere. I’m a huge fan of the farmer’s market.
Last week I went for the buy-3-baskets-get-one-free deal from one local farmer, and ended up with brussels sprouts, sweet potatoes, mini eggplants, and mini zucchinis. Not a bad combination if I do say so myself! I really wanted to use the sweet potato and brussels sprouts together so a googling I went. This recipe called out to me for a few reasons. First, its easy to make for one. The Hubs has been gone A LOT lately, so cooking has been a little challenging. Secondly, there’s an egg on top. Duh. That makes everything better. I ate this for dinner, but it would be great any time of the day.

Brussels Sprout and Sweet Potato Hash recipe from Savoring the Thyme
1.5 teaspoons olive oil
5 oz. brussel sprouts, quartered lengthwise
1/2 large sweet potato, grated
1/4 cup red onion, chopped
2 cloves garlic, finely chopped
1 teaspoon fresh thyme
salt, optional
freshly ground black pepper, optional

On my farmer’s market agenda for today is apples! Its pie time baby, and I’ve got some ideas up my sleeve. Remember my Split-decision pie pan that allows you to make 2 pies in one? Well I’ve got AT LEAST 2 apple pie ideas in my brain. This should make for a pretty fun afternoon one day this week. Do you go to a farmer’s market? What’s your favorite part?
