Buffalo Chicken Biscuit Bombs

A hot fluffy biscuit filled with buffalo chicken and melty pepper jack cheese?!?! Am I dreaming?! This might be the greatest appetizer ever, or a dream come true dinner recipe. Your choice.

I’ve had snacks on the brain lately. I know it’s January and everything, and I’m supposed to be focused on healthy eating and whatever, but I’ve got crispy, cheesy snacks running through my mind non-stop. They’re all I crave.

Is this some sort of omen? Maybe more of a sickness.

Luckily that big football championship is upon us as well as March Madness right around the corner, so it’s socially acceptable to start talking about snacks once again. (see ya later holiday detox foods!)

The perfect snack food in my mind must contain cheese.

The perfect snack in The Hubs mind is (very) spicy.

These buffalo chicken biscuit bombs were my idea of meeting in the middle.

Buffalo Chicken Biscuit Bombs

Epic and memorable recipes do not have to be complicated. These delicious nuggets of cheesy goodness were made simply with a can of refrigerated biscuit dough and a few pantry staples.

The Hubs loves buffalo chicken so much, and I am able to tolerate the spice level, so we’re never without a bottle of Frank’s Red Hot sauce in our fridge. To make super versatile buffalo chicken for use in dozens of recipes, simply salt and pepper any piece of chicken (breasts, wings, thighs, whatever) and roast at 375° for 35-45 minutes until the internal temp reaches 165°.

Melt butter and Red Hot sauce together (amounts vary depending on what you’re making) and mix it with cooked chicken.

That’s it.

Eat a chicken breast simply basted with buffalo sauce, make it into a sandwich, chop the chicken and pile it high on nachos, or combine it with ranch dressing and pepper jack cheese then stuff it into a biscuit.

The possibilities are endless.

Perhaps my snack dreams are a result of me ACTUALLY eating pretty clean the last few weeks. The Hubs and I cut ourselves some slack on the weekends which generally means splitting a bag of tortilla chips and a pint of ice cream, but this particular weekend we enjoyed a big batch of buffalo chicken biscuit bombs instead.

If you need an indulgent meal, or are looking to impress your friends at your next game day party, pick up a tube of biscuit dough and bake up a batch of these buffalo chicken biscuit bombs. The ultimate craving satisfier if I do say so myself.

Bonus tip! Oh honey, don’t stop at just buffalo chicken. You can stuff ANYTHING inside of a biscuit. Pulled pork? Yup. Taco meat. Definitely. Even veggies if you’re so inclined. Get creative!

Buffalo Chicken Biscuit Bombs

A hot fluffy biscuit filled with buffalo chicken and melty pepper jack cheese?!?! Am I dreaming?! This might be the greatest appetizer ever, or a dream come true dinner recipe. Your choice.

Ingredients

  • 1/2 cup Frank's Red Hot sauce
  • 1/4 cup butter
  • 2 chicken breast fully cooked and diced
  • 2 tablespoons ranch dressing
  • 2 cans refrigerated biscuit dough
  • 8 ounces pepper jack cheese cut into cubes

Instructions

  1. Preheat oven to 350°

  2. In a medium, microwave safe bowl, microwave the butter and Red Hot sauce until butter is fully melted. Whisk to combine. Add diced chicken and ranch dressing. Toss to coat

  3. Lay out individual biscuits on baking sheets lined with silpat mats or parchment paper. Stretch each biscuit round slightly to increase it's surface area. Place a spoonful of chicken mixture into the center of each biscuit round. Top with a cube of pepper jack cheese. 

  4. Fold the edges of the biscuit dough around the filling, pinching the sides to fully seal. Place each ball seam side down. 

  5. Bake for 20-25 minutes until golden brown. Cool slightly before serving.
