During the winter months I’m like a bear.
Hibernating.
I’m in a sweatpants, messy hair, afternoon naps haze.
The short days and cold weather don’t really agree with me. I’m still a SoCal girl at heart, and this time of year I long for those warm beach days.
The other total bummer of this time of year is the lack of fresh produce. Root vegetables anyone? I mean, a gal can only think of so many ways to use greens and citrus.
My tip for anyone that is feeling uninspired in the kitchen during any time of the year is MAKE IT A PIZZA.
We always have a couple of pre-made pizza doughs in our freezer in case of dinner emergency. Pizza is only limited by your imagination, so it’s the perfect meal when ingredients are sparse.
Caramelized Onion, Sausage and Kale Pizza
I’ve got kale coming out of my ears in my garden this time of year. Kale loves the cool temps and shady afternoons so I’m constantly on the hunt for new ways to use it.
On a particularly lazy weekend I did a little fridge and garden foraging and put together this caramelized onion, sausage and kale pizza.
Quick, easy, seasonal and comforting on a cold night. The perfect meal to eat on the couch in front of the TV. It makes for some pretty tasty leftovers for breakfast as well.

Sausage, Caramelized Onion and Kale Pizza

Ingredients
- 1 lb store-bought pizza dough
- 1 pound hot Italian Sausage casings removed
- 1 large onion thinly sliced
- 1 tablespoon balsamic vinegar
- 2 cloves garlic minced
- 1 cup pizza sauce
- 2 cups shredded mozzarella
- 1 pound roughly chopped trimmed kale leaves washed and dried
- 1 tablespoon lemon juice.
- Olive Oil
- Salt and pepper to taste
Instructions

Remove pizza dough from fridge 30 minutes before cooking

Preheat oven to 450 degrees.

Place a large skillet over medium heat, add a drizzle of olive oil and add the onions. Cook 2-4 minutes until onions begin to soften. Add balsamic vinegar and reduce heat to medium low. Cook, stirring frequently, until onions are caramelized and golden brown (about 15-20 minutes). Add garlic and cook 2 more minutes until fragrant. Remove onions from pan. Set aside.

In the same skillet add another drizzle of olive oil and add the sausages, breaking the sausage into smaller pieces with a wooden spoon. Cook until the sausages are cooked through (5 to 7 minutes). Transfer the sausage to a paper towel-lined plate.

Spray a baking sheet with cooking spray. Stretch the dough to desired thickness.

Brush the dough with olive oil and sprinkle with salt and pepper. Cover the dough with an even layer of pizza sauce and shredded mozzarella. Bake until the cheese is melted and the crust is beginning to brown and puff, about 6 minutes.

Meanwhile, in a medium bowl gently massage the kale with a teaspoon of olive oil and the lemon juice.

Remove partially cooked dough from the oven and add sausage, caramelized onions and kale.

Bake for another 2 minutes or until the kale looks perfectly charred and the crust is cooked to your satisfaction.
Recipe Notes
For best results preheat a pizza stone when you preheat the oven. Transfer stretched dough to prepared pizza stone using a pizza peel or a wide spatula
