I’m a huge shortbread fan. Sometimes I think I’m the only person keeping the shortbread girl scout cookies in stock. Maybe its my Scottish heritage but I cannot get enough of these buttery, crumbly cookies! As many of you may know, I also am wild about coconut so when I saw this recipe combining the two, I knew it was a MUST MAKE! To me, shortbread is a very “holiday” dessert. Â If any of you are looking to beef up your holiday cookie line-up this year, I highly recommend giving these babies a try!

I just lumped my dough into a squarish “log” then cut slices like you would with the store bought, tube-of-dough. I kind of like the funny, free form shape of the cookies.
Variation: Dip some in chocolate! I had a few chocolate chips leftover so I melted them in the microwave and dipped the cookies in it.
