Creamy Lemon Curd Buttermilk Popsicles

Remember all those fresh fruit curds I made a while back? Freezing them for later use made me think of popsicles, so I decided to make these lemon curd buttermilk popsicles! I started with this simple recipe from Whipped The Blog, but whisked in some of my fresh meyer lemon curd, then layered the mixture with more lemon curd for a swirled effect. Don’t have buttermilk? Yeah, neither did I, so I just made my own using milk and lemon juice. These popsicles were the perfect tangy treat on a hot day recently!

Creamy Lemon Curd Buttermilk Popsicles

Ingredients

  • 3 tablespoons fresh lemon juice
  • 1 2/3 cup milk or buttermilk then skip the lemon juice
  • 2/3 cup sugar
  • 1 tablespoon grated lemon peel
  • 1 pinch salt
  • 1/4 c prepared lemon curd plus more for layering

Instructions

  1. To make the buttermilk combine milk and lemon juice and let the mixture stand for 5 minutes.
  2. Whisk in sugar, grated lemon peel, salt and 1/4 cup lemon curd.
  3. Pour mixture into popsicle molds so they are 1/4 full. Carefully spoon a little of the additional lemon curd into the mold on top of the buttermilk mixture. Top with more buttermilk mixture. Repeat until mold is full.
  4. Freeze overnight
