Yesterday was the official first day of summer which called for some grillables! In the short history of betsylife, I’ve done a lot of grilling experimentation. I’ve made clams on the grill, pizza on the grill, and even fishburgers! Now i’m delving into the world of grilled salad. I’ve grilled plenty of vegetables in my day, but I have never grilled a whole head of lettuce. It seemed easy enough: cut a head of romaine in half, spray it with cooking spray, put it on the grill. Heck, even I can handle that. Steaks were on sale this week, so I thought a grilled steak plus a grilled salad would be a great way to kick off summer. For some reason its totally making me crave lemonade though! As you can see, I had a little help from my best pal Grace.
I finished mine with just a drizzle of balsamic vinegar, but I can imagine this being great with blue cheese crumbles or caesar dressing as well!
My acupuncturist told me that I had a weak pulse and should eat more red meat. Hopefully this meal will help with my energy levels since I have a super busy week. I’m wondering what happened to the slow summer days where I could lay out and read the majority of the time?!?! I know all the projects I’ve taken on will ultimately be worth it in the end. In the short term, my homie Jenny will be in San Diego this weekend which is a great prize for working so hard! I’m super stoked.
