These days, every day is national something-or-other day, most of which I don’t pay attention to (except national coffee day, September 29th, FYI). I just learned that March is national nutrition month, and for once I’m kind of on board with this faux “holiday”. If it takes calling a month national-whatever-month, to get people motivated, then by all means, let’s do it. For me, I’ve been feeling a bit un-nutritious lately so this month has arrived at just the right time for me.
My weeks lately have consisted of birthday parties, BBQ’s, travel, and a heat wave so intense that no one in all of San Diego is actually able to cook. Cheese, crackers and frozen yogurt pretty much sums up my most recent meals. All the festivities are winding down, and I’m ready to get back on a regular, nutritious eating regime. My gut can’t wait either.
To me, nutrition doesn’t mean whatever has the lowest calories. Low calorie is fine and all, but if you really want to feel great, and fuel your busy life appropriately, then you’re going to need things like protein, fiber, and vitamins. This one pot Idaho® Potato, Chicken and Vegetable Hash has all the nutrition you need to keep you feeling great throughout the whole day. Plus, it’s simple and fast to make, and only requires one dish! You can’t beat that.
