8 days from now I’m scheduled to get my life back. I’m trying not to think too much about it because a lot of crap can go wrong between then and now, but I love knowing that the end of Crazy July is in sight.
Busting ass doesn’t even begin to describe what I’ve been up to over the last 20+ days, and I am really looking forward to feeling like a regular person again.
One thing that has been maddening this month is the amount of recipe fails I’ve encountered. This is what happens when your brain is all over the place. If you are unable to focus your attention on what is right in front of you, you’ll never be able to give your best to the task at hand.
I’m hoping that our mealtimes were the only victim of my scatterbrain, but I wouldn’t be surprised if something else fell through the cracks that I haven’t even realized yet.
One fail was my initial shot at this juicy Lucy recipe. I read an article about how mixing plain greek yogurt into burger patties will keep them moist.
Yeah, don’t do that.
I’m not sure if it straight up just didn’t work, or if I over-mixed the meat to cause it to dry out, but the result was bone dry patties with some cheese in the middle. Not exactly what I had in mind.
The second go around I just barely handled the patties, while still doing my best to create a tight seal to keep the cheese inside, and we wound up with awesome, gooey, juicy burgers stuffed with Kerrygold aged cheddar cheese that were devoured in a second.
It was so great to have something work out (especially something delicious) I hope this is a sign of more focus, and more successes to come.
Jalapeno Cheddar Juicy Lucy Burger
Juicy Lucy recipe surprise: the cheese is on the inside! These gooey cheese stuffed beauties take the flavor up a notch with spicy jalapeños. The best burger you're going to grill this summer.
- 1 lb ground beef
- 1 jalapeno finely diced
- 1 egg
- salt and pepper
- 4 oz Kerrygold aged cheddar sliced
Preheat the grill to medium high heat.
In a large bowl combine ground beef, jalapeño, and egg. Do not over mix
Form thin patty "bottoms". Top with several slices of Kerrygold aged cheddar. Top with a formed patty "top". Carefully crimp the edges to seal the cheese in the center. Season each side with salt and pepper.
Grill for 5-6 minutes per side until patties are cooked through. Allow to rest for 5 minutes before serving.
Serve on a bun with your favorite toppings.
