On Saturday The Hubs said to me, “oh yeah, I need you to make 4 dozen cookies for me to take to work on Monday.” Who am I married to an 8 year old? As every dutiful elementary school parent does, I obliged, but I wanted to make something EASY, and, if possible, use something that was taking up valuable real estate in my pantry.
Ages ago I was given this can of Sprinkles cupcake mix. As someone who prefers to slave away for hours in the kitchen trying to find the perfect marriage of cake to filling to frosting when it comes to cupcakes, this can has gone pretty much unnoticed to me until now. I had heard you could make cookies out of cake batter, but had never tried it. After some googling, I found a good (easy) sounding recipe.
Cake Batter Cookies recipe adapted from Six Sisters Stuff
1-16oz can Sprinkles cupcake mix
3/4 teaspoon baking powder
2 eggs
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
1/2 cup color sprinkles **I actually dumped in the rest of the container of sprinkles I had. I don’t think it was quite 1/2 cup. Another pantry victory!
Preheat oven to 350 degrees. In a large bowl, mix together the cake mix and baking powder. In a small bowl, mix together the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine. You may need to use your hands to fully incorporate all the wet ingredients. Fold in the sprinkles. Roll teaspoon sized balls out of the dough and place on a cookie sheet
