I’m back from an insanely productive week at the lake. Not only did we crank through all the cabin opening duties (raking, scrubbing, cleaning gutters etc.), but I managed to do quite a bit of work on my blog as well.
Why am I unable to pry myself from the TV when I’m at home, but when I’m on vacation, I can go a week or more without even thinking about watching TV?
I sat on the screened in porch at the cabin, listening to the rain lightly drizzling outside and didn’t feel an inkling of boredom, impatience or even an urge to check my phone or social media. I hammered out a ton of blog updates in no time.
Why?!?! Why can’t I do this at home?
Now that I am back home and thrust into the whirlwind of work insanity, I find myself once again plopping down on the couch every night after exhausting shoot days in order to veg out in front of the TV.
I guess it’s because the work I was doing at the lake was mindless (mopping floors isn’t exactly a brain buster) so I had mental reserves leftover for more thoughtful work in the evenings.
Apparently I have a finite amount of brain power available to me each day. Does this mean I’m getting old?
Fortunately fresh dishes like this radish salad take practically no brain power or energy to make.
Just a few simple ingredients and you have the perfect light lunch, summer side dish or even vegetarian main course ready to go.
Simple Radish Salad
Crunchy watermelon radishes, fresh mint, tangy lemon and rich walnuts come together for an unexpected flavor explosion. Crumble on a little feta cheese for a bit of saltiness and you’re picnic ready.
Use a mandoline or a spiralizer for perfectly thin radish slices.
You don’t even need to turn on the oven on a hot summer day. This light radish salad is definitely my new go-to dish now that temps are on the rise. It doesn’t hurt that I have a huge mint plant taking over my garden as well as a lemon tree in my backyard.

Light Radish Salad

Ingredients
- 2 watermelon radishes
- 2/3 cup walnut oil
- 1/3 cup lemon juice
- 1/2 cup walnuts, chopped lightly toasted
- 1/4 cup feta cheese crumbled
- 2 Tablespoons fresh mint finely chopped
- salt and pepper
Instructions

Spiralize or thinly slice watermelon radishes.

In a small bowl, whisk together walnut oil and lemon juice. Season with salt and pepper.

In a large bowl, toss watermelon radishes with dressing. Add walnuts, feta and fresh mint. Serve immediately.
Recipe Notes
If you don't have walnut oil, substitute olive oil.ย
