Lately I feel like a passenger on a speeding train. Every day seems to just fly by, and although I know I accomplish a lot, sometimes it feels like an insurmountable list of to-do’s. I try to say, “yes” to as much as I can, not only in business, but personally as well. I find that it makes life a lot more interesting (8 course cocktail pairing dinner, 2 baseball games, hosting a vegan dinner for 10, and a fermenting demonstration this week alone!) but it often doesn’t help with the speeding train feeling. I would love for time to just stop for one day so I can catch up, although I know that list would just grow again.
As I’ve been writing this blog for over 2 years now, I’ve noticed some changes in my tastes. Although I still love to labor in the kitchen over long, detailed recipes, I find I can’t do that every week anymore. These days I’m doing a lot more, quick recipes, or make ahead stuff. Maybe I’m just better at planning, or maybe my busy life is gaining more influence. Either way, I’m sure I’m not alone. Everyone needs fast, simple, go to recipes that are delicious. Save the long, in depth recipes for rainy weekends or holidays!
One thing that I’ve always loved to do was make birthday cakes for my friends on their special day. Cake baking, although usually worth the time spent on it, does not always fit into a super packed schedule. I’ve been branching out with other types of birthday treats, and came across this gem on pinterest. Thank you to these genius sisters for coming up with the world’s easiest treat to make, that also packs an awesome surprise element. I actually brought these ingredients to work with me one day, and baked while I worked. 4 ingredients, minimal equipment needed, extra delicious. You’re gonna love them!
Rolo Cookies recipe from Six Sisters’ Stuff
1 pkg. Rolo’s
1 box Devils Food Cake mix
2 eggs
1/3 c. oil
Mix cake mix, oil, and eggs. Take a small ball of dough and form a ball around the rolo. (Only use enough dough to cover the rolo so it can spread through the cookie.)
Place on greased cookie sheet and bake at 350 for 7-8 minutes. Yields about 3 dozen.
