Salad of the week: BLTA stack

Maybe calling this a salad is stretching it a bit, or maybe not? What defines a salad anyway? This is mostly vegetables, its got vinegar on it, and its cold. Salad right? Either way, salad (or whatever you want to call it) doesn’t have to involve a lot of chopping, whisking, tossing, etc. Do yourself a favor today, and take the simple approach. We all deserve a break once in a while.

Get yourself some fresh produce and herbs. Whatever is available

Slice and stack tomatoes and avocados

I topped mine with grilled corn and chives. If you don’t have this, skip it, or add whatever you have on hand

Drizzle with balsamic vinegar, then top with some crispy bacon, fresh ground pepper and basil. Enjoy!

See how easy that can be? In about one minute you’ve got vegetables, healthy fats, and a little crispy bacon treat at your disposal. Because bacon makes everything better.

    This stack is gorgeous. When I make things like this they tend to fall over on layer 2. I am SO JEALOUS of the avocados you must get in California!
