Seasonal Potluck: Blueberry Champagne Popsicles

Blueberry Champagne Popsicles

Its Friday! In Seasonal Potluck land, that means HAPPY HOUR!  Blueberry month, no work, booze…..it pretty much doesn’t get much better than this!

Last summer I got some popsicle molds, but my first attempt (blueberry-peach yogurt popsicles) didn’t really turn out the way I had hoped (the yogurt and fruit layers did not adhere to one another). It kind of turned me off to popsicle making, so I put the molds away and didn’t take them out again until this week. With summer in full swing, and the temperatures on the rise, I was inspired to give popsicle making another shot. This time, with booze.

I learned from my mistakes last year and did not attempt a layered popsicle. These are solid all the way through, and came out PERFECTLY! I was a bit nervous that the champagne wouldn’t fully freeze, but it did, and the flavor was just the right balance of fresh blueberry and bubbly champy! My interest in popsicle making has officially been renewed, and I plan on trying out a few more ideas I have swimming around in my head before summer is over.

Blueberry Champagne Popsicles

1. c sugar

1 c. water

2 1/2 c. fresh blueberries

1 c. champagne

Heat sugar, water and blueberries in a saucepan over high heat until sugar dissolves and blueberry skins burst, stirring occasionally. Strain the mixture through a fine mesh strainer. Discard solids. Allow mixture to cool slightly then add champagne. Allow the mixture to sit until the bubbles go down. Pour into popsicle molds and freeze overnight

ps. you could totally make these in dixie cups a la my margarita popsicles

So I’ve been making good on the exercise promise I made to myself this week. That being said, I really felt like I earned one of these popsicles after my fitness sesh yesterday. Nothing like a boozy mid-afternoon treat!

I’m really looking forward to resting my super sore muscles this weekend. The Hubs and I are heading out for dinner tonight (a treat from his boss for doing so good at work last month) Tomorrow I’m going to watch my two besties run a 5K that finishes on the 50 yard line of Qualcomm stadium. I know a 5K is no marathon, but when else will I get to go on the field at the Q?! Sunday marks the beginning of the concerts in the park series at our local park, Kate Sessions.  I plan to make a picnic dinner for The Hubs and I, and go check out the scene. No drinking allowed this year so we’ll have to sneak our wine in a Starbucks cup!

    these look amazing. time to get some popsicle molds. there was an article in the new york times last weekend about popsicles, including mojito popsicles – i thought of you – check it out if you haven’t already!
