Simmered Cabbage with Turkey

Raise your hand if you’re feeling a bit overwhelmed by all things 2013. For many, this is your first full week back at work, you’re probably dealing with 2012 year end wrap up stuff, and possibly new budgets, new projects, and new 2013 deadlines. Let’s not forget those pesky resolutions you made. How are you supposed to deal with work, possibly the kids being back in school, and still find time to work out, organize your house AND cook a healthy meal each night?!

Let me help you. This recipe is fast, super healthy, and will help cleanse your system of any leftover holiday junk that might be hanging on for dear life. If you like Thai food, you’ll love this. If you like curry, you’ll love this. If you are like The Hubs and will eat anything that’s put in front of your face, you will love this.

Life doesn’t have to be so hard. Ok, maybe work is hard, and raising your kids is hard, but dinner doesn’t have to be. For this recipe, all you have to do is chop 2 things, open one can, then throw everything into a pan and turn on the heat. Even the busiest, most stressed out person can handle that. Do yourself a favor and put down the Thai takeout menu, then take 15 minutes to cook yourself a meal tonight. Your body and mind will thank you for it later.

Simmered Cabbage with Turkey recipe adapted from Cooking Light 

  • 2 tablespoons peanut oil
  • 1 cup thinly vertically sliced shallots
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground red pepper
  • 1/4 pound ground turkey
  • 4 cups finely shredded cabbage (about 1 small head)
  • 1 can diced tomatoes
  • 1/3 cup coarsely chopped unsalted, dry-roasted peanuts

Heat a wok or Dutch oven over medium heat. Add peanut oil to pan, and swirl to coat. Add shallots, salt, turmeric, and red pepper; cook for 3 minutes or until shallots are tender, stirring frequently. Add turkey; cook for 2 minutes or until the meat begins to brown. Add cabbage and tomato; toss well to combine. Reduce heat to medium-low; cover and cook for 10 minutes or until cabbage wilts. Stir in peanuts; cover and cook 10 minutes or until cabbage is tender.
