Thanksgiving Leftovers Stromboli
I’ll admit I’m generally not much of a leftovers kind of gal, but there is something absolutely irresistible about Thanksgiving stuffing, turkey and mashed potatoes. I could eat Thanksgiving leftovers once a week for the rest of my life, and never get sick of it. Don’t even get me started on leftover pumpkin pie (best. breakfast. ever.)
So as the holiday nears, I find myself dreaming up a menu that will be equally ย good the day of, and all the days that follow. It’s one thing to heat up a plate of leftovers 2 or 3 times a day for a week (Don’t judge), but once you get down to the end of everything, even my beloved stuffing becomes a bit unappealing.
Enter this awesome Thanksgiving Leftovers Stromboli. It’s like leftovers wrapped up in a brown, crispy hug.
Step one: Roll out a prepared pizza crust
Step Two: Top with cranberry sauce and leftover turkey
Step Three: Pile on leftover stuffing
Step Four: Finish with a pile of leftover mashed potatoes
Step Five: Roll it up and bake! 400 degrees for about 15-20 minutes or until golden brown.
Serve with a side of leftover gravy for dipping!!
I’ve pretty much become a hero in my house thanks to this recipe. Pizza is The Hubs’ absolute favorite food of all time, so wrapping anything in a pizza crust automatically makes it Hubs-approved. Do you think a regular leftovers pizza with gravy as the sauce would work too? I might have to try that next year.

Just a thought…sometimes pizza crust is difficult to work with…but I bet this would be great with either puff pastry or a Pillsbury-type canister rolls…

So I used Pillsbury Cornbread and added some left over maple sasuage. I left out the mashed potatoes because my son doesn’t like them. It was a super hit! I didn’t have any leftovers!

I want to make this and freeze it for later. Would you freeze before baking, thaw, and cook? Freeze before cooking then bake from frozen? OR cook, then freeze, thaw, and just warm up? (Maybe pull it a little underdone?)

I think I would make-freeze-bake from frozen. Obviously the cook time would be longer, but I think if you defrost first, the pastry wouldn’t be as flaky
