Caprese Grilled Chicken BLT Sandwich

This grilled chicken caprese sandwich has a few awesome extras. Bacon and hummus take it to the next level!

Raise your hand if you’ve had this conversation before.

“What do you want to do for dinner?”

“I don’t know. Anything is fine with me.”

“Ok, let’s get pizza.”

“No, I don’t want pizza. Anything but pizza.”

“How about Thai food?”

“Meh.”

“Fine. You choose then.”

“How about burgers?”

“No. I don’t want burgers.”

………and so on and so forth until finally someone gets mad and says,

“fine! I guess we’ll just have nothing then!”

Yup. This happens to me pretty frequently. Recently, while The Hubs was traveling, I was actually having this conversation with myself. I couldn’t decide if I wanted chicken, or a sandwich or a salad. That’s when I realized I could have them all in one delicious meal.

Please allow me to demonstrate how this ephiphany came to life. Presenting the Caprese Grilled Chicken BLT Sandwich.

I started with a crusty ciabatta bun. I love to buy these a la carte at the grocery store deli.

Then I added a thick spread of my all time favorite hummus, Majestic sprouted cilantro jalapeño hummus.

A little organic lettuce from my CSA box,

Bacon because…..well, bacon. Duh.

A simple roasted chicken breast that I cook in bulk and eat all week long for lunch.

A thick slice of buffalo mozzarella. What’s better than this? Oh wait. It does get better!

Fresh, seasonal heirloom tomato slice.

Basil straight from my backyard garden. Don’t worry snow states! Your garden is coming!

Top it off, and wrap it up!

Voila! All my favorite foods, and everything that I was craving in one sandwich. BLT. Fresh caprese salad. Roasted chicken. Spiciness.

The next time you’re wondering what’s for dinner. I encourage you to think outside the box, and possibly combine everything that you’re considering into one meal. Thai pizza? Pasta sandwich? Seafood salad? There’s actually dozens of combinations that would be awesome, total family pleasers, that you’ve probably never even considered. Just think about it next time.
