Chocolate Chip Pretzel Cookie Ice Cream Sandwiches made with homemade Guinness beer ice cream is the ultimate adult dessert recipe.  Rich, boozy and decadent!

Recently I had a stroke of genius that led me to create these insanely addictive Chocolate Chip Pretzel Cookie Ice Cream Sandwiches.

Don’t ask me where I get my inspiration from. More times than not, ideas will just pop into my head. For Christmas, the Hubs gave me a waterproof notepad for the shower so I don’t forget any ideas that pop into my head when I’m in there.

A solution to a common problem of mine.

When I’m home and have the time, I like to immediately act on ideas as they arise.

This was the case with these ice cream sandwiches.

I was trying to think of something special to make for Val’s birthday last week, and the idea of Guinness ice cream came to mind. Before she was pregnant, Val was a lover of stout beer, and now that she’s pregnant, she’s become a lover of desserts, particularly ice cream sandwiches.

I figured why not combine the two for a special birthday treat?

Chocolate Chip Pretzel Cookie Ice Cream Sandwiches

Any time you make ice cream from scratch it requires some pre-planning. The key to a successful, creamy batch of homemade ice cream is keeping all the elements super cold the entire time.

  • Cool the ice cream mix as quickly as possible after cooking
  • Refrigerate the mix overnight before churning
  • Make sure the bowl of your ice cream maker is fully frozen 

Just so you know, this Guinness ice cream is so delicious just on it’s own. Super creamy and malty. When you sandwich it between crispy, salty chocolate chip pretzel cookies we are talking dessert nirvana over here.

They were pretty much a beer-loving pregnant lady’s dream come true. 

Everyone loved these and I was the hero of this birthday dinner!

Chocolate Chip Pretzel Cookie Ice Cream Sandwiches {With Guinness!}

Ingredients

For the Cookies

  • 3/4 cup butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup dark brown sugar firmly packed
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 12 oz package semisweet chocolate morsels
  • 2 cups coarsely crushed pretzel sticks

For the ice cream

  • 16 oz can of Guinness or other stout beer
  • 2 cups heavy cream
  • 1 3/4 cups whole milk
  • 15 large egg yolks
  • 1 cup granulated sugar

Instructions

To make the cookies

  1. Preheat oven to 350°. Beat butter and sugars at medium speed until creamy. Add eggs and 1 1/2 tsp. vanilla, beating until well combined.

  2. Combine flour, baking soda, and salt in a small bowl; gradually add to sugar mixture, beating just until blended. Beat in morsels and pretzel sticks just until combined. Drop by tablespoonfuls onto parchment paper-lined baking sheets.
  3. Bake for 10 to 14 minutes Remove, and press the warm cookies flat with the back of a fork. Cool completely.

For the ice cream

  1. In a small saucepan bring Guinness to a boil. Reduce heat to simmer and cook until liquid is reduced to 2/3 cup, about 20 minutes.

  2. Meanwhile in a large saucepan combine cream and milk. Bring to a simmer over moderately high heat.

  3. In a large bowl, whisk the egg yolks with the sugar.
  4. Gradually add the hot cream mixture to the yolks, whisking constantly until well blended.

  5. Return the mixture to the saucepan and cook over moderate heat, stirring constantly until it coats the back of a spoon, about 6 minutes; do not let it boil. Whisk in reduced Guinness

  6. Strain the custard into a medium bowl and refrigerate overnight.
  7. Pour the custard into an ice cream maker and freeze according to the manufacturer's instructions (this may have to be done in 2 batches).
  8. Pack the ice cream into an airtight container and freeze until firm, about 4 hours.
  9. Sandwich one scoop of ice cream between two cookies and enjoy!

    I ate these and threw up. My wife did as well and now she’s deathly ill. She’s at the hospital and they say she probably won’t make it. I hope your happy. You ruined everything!!!!!

      No Bill I am not happy. I didn’t realize posting recipes online could kill someone. I certainly hope your wife is ok. I’ll be more cautious when typing a recipe that someone might read in the future

        He’s definitely lying…why wouldn’t he be at the hospital with his wife..how does he have time to make this comment and not go to the hospital to be by his wife’s side..report this tomfoolery immediately
