Believe it or not, a healthy spinach dip recipe does exist!
I had another fabulous fun month weekend! The weather was beautiful, and we hit up an oceanfront Oktoberfest on Saturday. On Sunday I watched the Chargers win, and got a ton of cooking done. Great times! Only three more days of work to get through before we’re on vacation! Yay!
Life is good, and now we have Monday night football to look forward to.
If you’re like me, and ate a ton of junk food over the weekend, maybe you want to keep things a little lighter for Monday night football. This light feta an spinach dip recipe is pretty much as healthy as football food gets around here. That is, as long as you eat it with veggies and not chips. (Ok, I ate it with chips. Everything in moderation right?)
Creamy Feta-Spinach Dip recipe from Cooking Light
- 1 (8-ounce) carton plain low-fat yogurt
- 3/4 cup (3 ounces) crumbled feta cheese
- 1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
- 1/4 cup low-fat sour cream
- 1 garlic clove, crushed
- 1 1/2 cups finely chopped spinach
- 1 tablespoon minced fresh or 1 teaspoon dried dill
- 1/8 teaspoon black pepper
- Fresh Dill (optional)
Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness. Cover with additional paper towels, and let stand 5 minutes. Scrape into the bowl of a food processor using a rubber spatula.
Add the cheeses, sour cream, and garlic, and process until smooth, scraping sides of bowl once. Spoon yogurt mixture into a medium bowl, and stir in the spinach, minced dill, and pepper. Cover and chill. Garnish with fresh dill, if desired.

Glad to see a tasty dip that is not loaded with a lot of fat and calories. By the ingredients, this recipe has so much flavor, the fat will never be missed. I will have to get this together on our next movie night. Thanks for sharing.
