This kale salad recipe is light and healthy and will keep you full all day longย
Yay for short workweeks! Yes, its kind of a bummer that the 4th falls in the middle of the week this year. I hope that means a lot of you get Thursday and Friday off as well, but even if you do not, you still get a mid-week break which is something to celebrate none the less. I hope that everyone has lots of eating, drinking, sunning and laughing on their 4th agendas. We’ll be BBQ-ing it up here at the Wet Spot (the name given to our backyard pool) with some friends. Ideally I’d be pumping you full of easy BBQ and picnic recipes this week, but my life has been a little hectic, so you’ll just have to fend for yourselves this holiday.
Kale Superfood Salad With Edamame
That is, unless you want to serve your guests this crazy healthy superfood salad for the 4th. I’ll admit, it makes a great side dish, and in a sea of ribs and cookies and beer, it can never hurt to slip in a few rogue nutrients. I was trying to emulate the Whole Foods Superfood Salad,ย with this recipe, but made a few changes based on what I could get at my farmer’s market and what I already had on hand.
Kale Superfood Salad With Edamame
3 bunches kale, cut into thin ribbons
1 bunch of carrots, diced
1/2 red onion, diced
1 c. dried berries. I used a mix of blueberries, cranberries and goji berries
1/4 c. raw pumpkin seeds
1/2 c. edamameย
2 tomatoes, diced
Combine all ingredients in a large bowl. Serve with you favorite dressing. (I used a light balsamic vinaigrette)ย

Its based on the Whole Foods superfood salad. I bet if you google that, you’ll get a decent idea.
