Peanut Brittle Cookies These peanut brittle cookies are like the crunchy, crispy cousin of your standard soft batch peanut butter cookies. I’ve become mildly obsessed with them. So much so, in fact, that i’m already plotting to steal any peanut brittle I may come across in the upcoming holiday season from work parties, friends houses, etc. in order to make another batch. Or, I guess I could just go buy some (that would be too easy).

Peanut brittle has never been my favorite candy. Anything that’s coated in chocolate will usually trump anything that is not. Besides, doesn’t it always seem like its going to break your teeth or something? Let’s get real. I’m pretty sure most people think of peanut brittle as something only a grandmother can love. I actually do like peanut brittle, but when I attended an event at See’s Candy a while ago, I quickly gobbled up all the chocolate candies (even the maple creams) I went home with, and the lonely box of peanut brittle sat on my shelf, untouched, for several weeks. Had I known that these cookies were so awesome, I certainly wouldn’t have waited so long!

Peanut Brittle Cookies Hence my peanut brittle thieving plan. I’m willing to bet that there are others out there who also leave the unassuming peanut brittle to the side. Watch out friends, it may turn up missing. And by missing, I mean, baked into some delicious cookies and in the bellies of me and The Hubs.

Peanut Brittle Cookies

What to do with leftover peanut brittle? Make cookies!

Ingredients

  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 cup butter or margarine
  • 1/2 cup chunky peanut butter
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1-8 oz box See’s Peanut Brittle crushed
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. In the bowl of a stand mixer, cream together brown sugar, sugar and butter.
  3. Add eggs (one at a time) mixing well between each addition. Mix in peanut butter until well combined.
  4. In a separate bowl, sift together flour, salt and baking powder.
  5. Turn the mixer to low, and slowly add the dry ingredients to the creamed mixture.
  6. Fold in the crushed See’s Peanut Brittle and chocolate chips.
  7. Roll dough into small balls, flatten with a fork and place on a greased cookie sheet .
  8. Bake for 15 minutes.

    I don’t normally like to eat peanut brittle even though I do like the flavor of it so I think that this is an awesome way to use it! Perfect for the holidays.

    I made half the batch with chocolate chips added and half without the chocolate chips. I wasn’t impressed by the chocolate because it disguised the peanut flavor. However, the plain batch was delicious. I love chocolate, but it just fought the peanut flavor too much.
