Roasted Broccolini with Crispy Kale, Chickpeas and Burrata

Roasted Broccolini with Crispy Kale, Chickpeas and Burrata is the perfect meatless Monday meal. Quick and easy for those days when you’re craving a light dinner.

If i’m being honest this is the kind of meal I would eat every day. I love a roasted veggie. I love crispy things, and gooey burrata cheese makes everything better.

However, there is another member of my household that I cook for, and he would prefer to eat a slab of meat for most meals. Or at the very least, something more substantial than just veggies and chickpeas, which means I save simple dishes like this for those weeks when he is traveling.

If you’re not roasting vegetables in your house, then you need to wake up! Most vegetables are roasting friendly. 

-cauliflower

-broccoli/broccolini

-carrots

-kale

-butternut squash

-brussels sprouts

-beets

-potatoes

-cabbage

These are just a few examples. 

All you have to do is portion vegetables into equal sized pieces, drizzle with your favorite oil, season to your preference, then roast! It’s really just that easy.

Roasted Broccolini with Crispy Kale, Chickpeas and Burrata

When I’m putting together a quick meal like this one, I like to add a crispy element and a creamy element. For this roasted broccolini dish I had a bit of crispy kale as well as crispy roasted chickpeas which are my favorite snack to keep on hand. This week’s batch was flavored with everything bagel seasoning. 

You could easily substitute the chickpeas with croutons, chopped almonds, or even crumbled tortilla chips. Anything you have on hand that adds a bit of crunchiness will work!

For the creamy element, I went with burrata cheese, but you can do ricotta or even a drizzle of greek yogurt or ranch dressing. 

A few quick steps and you’ve got yourself a light and healthy dinner.

Roasted Broccolini with Crispy Kale, Chickpeas and Burrata

Ingredients

  • 1 bunch broccolini trimmed into long florets
  • 1 bunch lacinato kale trimmed
  • 3 tablespoons olive oil
  • zest from one lemon
  • salt and pepper to taste
  • 1 cup crispy roasted chickpeas
  • 1/2 cup burrata cheese

Instructions

  1. Preheat oven to 425°F

  2. Drizzle broccolini and kale with olive oil. Sprinkle with salt, pepper and lemon zest. Toss to fully coat. 

  3. Roast for 12-15 minutes until charred and tender. 

  4. Portion vegetables onto 2 plates. Divide chickpeas and burrata between each serving.
