I would never consider myself a football fan, although I’m not anti-football either. I do like having a weekly event to get together with friends for, but I hate that football always signifies the end of summer, and some weekends I wish I just had my TV back. The Hubs told me last night that he was depressed that football is over now. I said “well soon you’ll have March Madness”, and he reluctantly agreed.
I’m happy to have a break from the “party snacks” until then. For my football food finale this year, I made this queso blanco. Perhaps you recall just HOW MUCH we love white cheese dip around here, and I’m happy to have discovered white american cheese (who knew?) so I can now make it at home whenever I want. In moderation of course.
Queso Blanco recipe from Food.com
- 1 lb white american cheese
- 2 (4 ounce) cans diced green chilis, undrained **I used only 1 can of diced jalapeno per 1lb of cheese. very spicy!
- ½-1 cup heavy cream, depending on thickness of dip you like

Simmer all on the stove in a saucepan until smooth. Can be continuously re-heated if the sauce cools and gets too thick.
