I would never consider myself a football fan, although I’m not anti-football either. I do like having a weekly event to get together with friends for, but I hate that football always signifies the end of summer, and some weekends I wish I just had my TV back.
The Hubs told me last night that he was depressed that football is over now. I said “well soon you’ll have March Madness”, and he reluctantly agreed. Poor guy. It’s probably for the best. All the game day grub can really do a number on someones gut.
Super Easy Queso Blanco Dip
I’m happy to have a break from the “party snacks” until college basketball starts up. Kale for everyone! For my football food grand finale this year, I made this queso blanco dip. Perhaps you recall just HOW MUCH we love white cheese dip around here, and I’m happy to have discovered white American cheese (who knew?) so I can now make it at home whenever I want. In moderation of course.
You can dip pretty much anything in this; chips, pretzels, veggies, sliced pepperoni (don’t judge).

Ingredients
- 1 lb white american cheese shredded
- 2 4 ounce cans diced green chilis, undrained
- 1/2 cup heavy cream
Instructions

Combine all ingredients in a saucepan over medium low heat. Whisk until melted and smooth. Dip can be continuously re-heated as necessary.
Recipe Notes
This is a great dip for the crock pot! Set it to a low temperature and the dip will stay melty.Â

Wow! I would definitely use the green chilies, not the jalapenos -that would be way too hot for my taste buds. Plus, green chilies have a better flavor than the canned jalapenos. Looks like a yummy recipe, though. 🙂
