Broccoli tots are your new best friend. They give you all the crispy, crunchy, cheesy flavor you crave when you think of tots, but also keep you in check by being chock full of healthy broccoli. A great recipe as a side dish or a snack. Great for game day!
I am so stoked to bring you this first recipe from my new kitchen! We’ve got quite a bit of work to do around the house still, but the kitchen is (relatively) box free and ready for use. I feel like I’ve been dreaming of this moment for months.
Oh wait, I have.
If you’ve been reading this blog at all lately, you know this has not been an easy transition for me. It sucks to be a creative person and not have the ability or facility in which to create. The combination of that, and the constant waiting and wondering drove me nearly insane these past few months.
I’m now FINALLY able to begin to tackle my (very long) list of recipe ideas, and I’m going after it with a renewed enthusiasm and energy. I am truly starting to feel like myself again.
Here we go…….Cheddar, Ranch Broccoli Tots!
Now that we’re getting more settled, I am desperate to get back on the healthy eating and living bandwagon. Too much takeout has done a major number on my body. If it were just me, I’d eat beans, eggs, and roasted vegetables for every meal of the day. I love my veggies, but The Hubs doesn’t necessarily share my enthusiasm, so I’m always looking for new ways to entice him with greens.
Why not a tot?
Actually, now that I just typed that, I think it may become a new food motto of mine. They can be made out of pretty much anything.
I digress.
These broccoli tots aren’t clean eating at it’s finest, but they are a bite sized way to ease back into healthy eating. They’re also a fun way to sneak some good stuff into your March Madness spread, or into picky little eaters mouths. I’m all about the “some is better than none” philosophy when it comes to healthy eating and exercise, and these Cheddar, Ranch Broccoli Tots fit right in there.
I’m sure these could probably be adapted to be gluten free or whole 30 or whatever people are doing these days, but I’m just going to stick with regular old cheesy tots with regular eggs, and regular bread crumbs. If you do want to adapt, please leave a comment and let me know how they turn out.

Cheddar, Ranch Broccoli Tots
These tots are a great way to enjoy your vegetables at dinner, and even make healthy game day snacks for kids and football players alike!
Ingredients
- 2 cups uncooked broccoli
- 1 large egg
- 1/4 cup finely diced yellow onion
- 1/3 cup cheddar cheese
- 2/3 cup panko breadcrumbs
- 1 packet Ranch seasoning mix
Instructions

Preheat the oven to 400ยฐF. Line a baking sheet with parchment paper and set aside.

Cut the broccoli into florets and submerge in boiling water for one minute. Remove and immediately shock in a bowl of ice water to stop the cooking.

Finely chop the broccoli and thoroughly combine with egg, onions, cheddar, breadcrumbs, and Ranch packet.

Scoop 1-2 tablespoons of mixture and form into a tot shape. Place tots on prepared baking sheet.

Bake 20-24 minutes, turning halfway, until golden brown.
