To combat the Monday following an amazing weekend girls trip blues, I’ll be drowning my sorrows in these no bake peanut butter energy bites today. These are so easy to throw together when you don’t get around to shopping or meal prepping over the weekend. Seeing as I also came back with a bit of a cold, I will also be ingesting tons of juice and vitamins as well. I guess there’s a downside to every wild weekend, but the good times from our Napa trip far outweigh the crappiness of this head cold.

My girlfriends and I had the MOST fun time ever in NorCal. Tons of wine, fancy meals, baby hugging, and non-stop laughter. It is so important to make time for those you love in your life. I mean, after all, why even bother working and earning money if you don’t use it to spend time with people who enrich your life?

No-Bake Peanut Butter Energy Bites

If you were busy having a fun time with your family this weekend, and didn’t get around to grocery shopping or thinking about what you would be eating for breakfast or lunch this week, try throwing together these no bake peanut butter energy bites. They are super fast and easy, and can be made with pretty much anything you have in your pantry.

These bites are also super kid friendly and are great for lunches or after school snacks. I’m always sure to have a batch on hand when I volunteer to watch my friends kids for an afternoon. They’re also fun and easy for kids to make along with you.

No Bake Peanut Butter Energy Bites

These no bake peanut butter energy bites are one of my most popular recipes on Pinterest

Ingredients

  • 1 cup old fashioned oats
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 3/4 cup chopped pitted dates
  • 2 T sunflower seeds

Instructions

  1. Mix all ingredients together in a medium bowl. Refrigerate for one hour. Roll into teaspoon sized balls and store in the fridge.

    We are slightly addicted to these! I used crunchy PB and raisins instead of dates. Delish!
