Make Ahead Freezer Breakfast Burritos

Make ahead freezer meals are a necessity for busy families. These freezer breakfast burritos are great for breakfast on the go.

I love a breakfast burrito, but it’s not always convenient to make one in the morning before work. Thank god we live in the era of refrigeration, because eggs, cheese and meat actually freeze GREAT, and are super easy to reheat on the go.

Seems like I’ve been hosting a lot of factories in my kitchen lately. First the casserole factory for my new mom friend, now a burrito factory.

Make Ahead Freezer Breakfast Burritos

The Hubs expressed interest in making a plethora of breakfast burritos to freeze and take to work with him each day for “brunch” (not sure why someone needs a daily brunch at work, but hey, who am I to judge?) Vacation aside, he’s been under a lot of stress lately, so I thought I’d do a good deed and make the burritos for him.  I made simple egg, sausage (or bacon) and cheddar burritos for him. If I was making them for me, I would have used egg whites, feta and veggies.

I whisked up 18 eggs with a splash of milk, cooked up a package of breakfast sausage and a package of bacon, and topped it all with a couple of handfuls cheese.  I made 11 or 12 burritos total, but let’s not forget the not-so-secret ingredient. Sriracha!

The key to ANYTHING the Hubs eats is Sriracha…….LOTS of Sriracha

I just wrapped ’em all in plastic wrap and froze ’em. The Hubs said he removed them from the plastic, wrapped them loosely in a paper towel, and reheated for about a minute and 45 seconds. Beginning to wonder what other things I could make factory style and eat over time………

    I love this idea. I always forget that you can freeze stuff you make. I have started trying to cook/ prep-cook a lot on Sunday so that we can have yummy food for the week. I just don’t have as much time to cook lots of yummy fresh meals like I use to. I am definitely doing my own burrito factory soon.

    Great idea! I am looking for a way to have something a little more substantial than a bowl of cereal on hand, and this is perfect.

    Awesome idea-my teenage son is starting 6am wrestling practice and I need an actual breakfast he can eat on the go. I made something else today which he liked . Not a sugary breakfast bar/muffin or bagel but protein.

    Do these freeze well with the eggs their not watery? And how long do they last! Love this Idea

      yes! They freeze perfectly!. If you’re worried about it, allowed the eggs to cool before freezing. I would say if they’re wrapped well they would last about a month, but they’re always gone within 10 days or so in this house because everyone loves them so much
