These freezer breakfast bowls have saved my life this month. I have been beyond overwhelmed with work (a very good thing) which has left me little time to cook and eat meals for myself.
Thankfully, my workload kicked off with a very challenging assignment from my friends at the Idaho Potato Commission. They asked me to develop 4 recipes, that feed 4 people each for $25.
TOTAL.
Not $25 per recipe, $25 for all four.
OMG this was not an easy task. I thought I had it all figured out, made my list, went to the store, and my total came to $35.
Whoops.
After asking for advice on Instagram, and some very helpful suggestions from friends of mine (thank you Bridget!) I managed to get my costs down, and created four awesome recipes.
First up were these make ahead breakfast bowls (freezer friendly!). Four servings for only $5.38!!!
Like I said before, these have been a life saver for me. All it takes is one day of meal prep then 3 minutes in the morning, and you have a complete and hearty breakfast to eat on the go. This is the ideal meal for busy families, especially during back to school time.
I need to start making more single serving freezer foods.
