As my birthday approaches I always tend to reflect on my year and think about what I can do differently going forward. I’m a firm believer in the notion that small changes can make a big impact.
I write about food on this blog a lot because I cook and style food for a living, and I love the creative process of cooking.
It’s a big part of my daily life, but I think about way more than food.
Recently I saw an interview where someone was saying how they “try to give the same energy to everyone” whether it’s cashiers, or business associates, or friends.
I really like the idea of people coming in contact with your energy. I think I do this for the most part, but going forward into my 33rd year, I’m going to try to be more conscious of giving EVERYONE my best energy, and this includes you my friendly blog readers.
Some days I find myself staring blankly at this screen. I type a few sentences about some food being awesome, or delicious or whatever.
It’s all true, but miscellaneous words on a screen are not always reflective of my personal energy. After 3 years of blog writing, I realize that sometimes its not betsylife, its more like betsy-auto-pilot life. So, for the future I will try to do better about bringing more of me to EVERY post, not just on the days when I have extra time, or I’m feeling particularly inspired.
Moving on to the food…..
Savory Cheddar Jalapeño Waffles
This cheddar jalapeño waffle recipe is a major treat in this house. I’m not much of a sweet breakfast gal, but I love all things cheese related, so I figured why not make a savory waffle?
I knew The Hubs would love the spiciness (and the optional baked in bacon), but I had no idea how amazingly awesome these would actually turn out.
So these waffles get to be my metaphor for today. My life is amazing as-is, just like the waffles, but life can always be better with a few small tweaks.
Just put an egg on it.
Or cook some bacon in it.
Or make it with high protein waffle mix.
Or make a sandwich with a piece of fried chicken in the center.
Time to bring some extra energy to your savory waffles.

Jalapeño-Cheddar Waffles

Ingredients
- 2 large eggs
- 3 tablespoons vegetable oil
- 2 cups low-fat buttermilk
- 1/2 cup shredded cheddar cheese
- 1 3/4 cups all-purpose flour
- 1 1/4 cups yellow cornmeal
- 1 tablespoon baking powder
- 1/4 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 jalapeño minced
Instructions

Preheat waffle iron.

In a large mixing bowl, whisk together flour, cornmeal, baking powder, sugar, salt, cumin, chili powder and garlic powder.

Add jalapeño, buttermilk, vegetable oil, and eggs; mix well.

Stir in cheddar cheese.

Pour 1/2 cup of batter into your waffle maker and cook until golden brown; repeat until all batter has been used.

I am so excited to have found this recipe. I grew up in AZ and now live in TX. In AZ we have a restaurant called Chompies, and they have the best chicken and waffles. Their waffles are made exactly like this. I am so thrilled to be able to make my favorite brunch at home!!! I cant wait to try it.

So, this is basically the Paula Deen “Cornmeal Waffles” recipe with cheese and a few spices added. I’m totally okay with this, but I believe in giving credit where credit was due.

My husband, who normally doesn’t like waffles, loved these! I love waffles and am convinced they are the best I’ve made.
We made a couple modifications- 1/2 the recipe but the entire jalapeño and a bit more cheese. Next time, I’ll do two jalapeños as we like it spicy. We didn’t have cornmeal, so used panko. Had these with sour cream and green onions. Loved them!!
