Fat Tuesday is right around the corner and it’s time to throw a raging Mardi Gras party!
Ok, let’s be real. I probably won’t be drinking a lot, flashing anyone for beads or even leaving the house on Fat Tuesday, but boy do I ever love a themed snack! Am I showing my age?
I’ve actually never even been to New Orleans. It’s definitely been on my bucket list forever, but I probably won’t be going during Mardi Gras. I’m not sure New Orleans is ever tame, but perhaps a visit during a less busy time of year is more my speed.
These days I’m more interested in checking out the city’s unique architecture and indulging in all of New Orleans incredible cuisine. Every time I see a show on TV about New Orleans, all people can talk about is the food.
It’s always super inspiring.
Po’Boy Inspired Spicy Baked Shrimp Dip
This year I put that inspiration to the test when my friends at Sprouts contacted me to develop a celebratory Mardi Gras recipe. After browsing my local Sprouts store, I decided to turn the classic cajun sandwich, the shrimp po’boy into a spicy shrimp dip.
A po’boy needs a little spice, a little crunch, and something creamy. By combining Sprouts cream cheese and greek yogurt with cajun seasoning and the cajun holy trinity; onions, bell pepper and celery, I was able to create a shrimp dip with that authentic po’boy flavor. I topped the dip with some crunchy buttered bread crumbs before baking the whole thing in a bread bowl.
