Football season already?!?! When did that happen? Now that I’m emerging from my fog that was the month of July, I’m realizing that back to school stuff is happening, football is on, and the summer is rapidly drawing to an end.
Booooooo!!!!
Totally not cool. I suppose autumn has its perks, but it’s just not the same as glorious, perfect summer.
As the Chargers kick off their pre-season today against the Packers, I’ll be kicking off my season of appetizer making (my favorite part of football) with this awesome corn dip. I love when corn is in season. I could eat corn on the cob for every meal, but I also like to mix it up and use it in salads, or dips, or soup, or what have you.
It’s super versatile, and definitely one of my favorite vegetables.
Cheesy Roasted Corn Dip
When The Hubs first dug into this super simple dip, he said “dang this is good! Is there bacon in here?” The roasting of the corn kernels before mixing with the cheese is what gives this dip that deep, rich savory flavor. Obviously gooey, melty cheese goes with everything so it was a natural pairing with the corn.
Every good dip needs a crunchy element so corn flake topping for the win! I think this corn dip checks all the boxes of “perfect party food” I highly recommend assembling a skillet for your next bbq and heating it up when the time is right. It travels great and is universal enough to please kids and adults alike.
While I can’t get enough of tortilla chips, you could easily serve this with crostini or even crispy fresh veggies.

Roasted Corn Cheese Dip
Cheesy roasted corn dip is a simple and delicious way to enjoy that fresh summer sweet corn. A perfect appetizer for a backyard bbq or football watch party.
Ingredients
- 1 tablespoon olive oil
- 3 cups fresh corn kernels
- 2 cups sharp Cheddar cheese shredded
- 8 ounces reduced-fat cream cheese cut into small pieces
- 1/2 cup cornflakes
- 1/8 teaspoon cayenne or chili powder
Instructions

Preheat oven to 375°F

Add 1 tablespoon olive oil to a 10-inch skillet over medium heat. Add corn; cook, stirring occasionally, until mostly golden brown, 5 to 7 minutes. (Corn kernels may “pop” as they brown.)

Remove from heat; stir in Cheddar and cream cheese. Sprinkle cornflakes over the top. Transfer to the oven. Bake until golden and bubbling, 18 to 20 minutes.

Sprinkle the cheese dip with cayenne and serve.
